(Makes 2 small pancakes or 1 large one) Rinse and dry a medium-sized sweet potato and poke it several times with a fork. Wrap it in a paper towel and microwave it for about 7 minutes on high or until soft. Measure 1/3 cup of complete pancake mix (like Aunt Jemima) and stir in 1/3 cup water. Scoop out the flesh of the sweet potato and stir into the pancake mixture. Coat a frying pan lightly with vegetable-oil cooking spray (like Pam) and cook the pancakes for about 5 minutes on each side over medium heat. Top with 1 tbsp. of light or reduced-calorie syrup. Serve with 1 cup skim milk.
