My Pensieve

Black Beans


*It is best to start early in the morning the day that you will eat the beans.*


1. Clean beans thoroughly.

  • Pour beans into pot slowly to spot & remove any rocks/foreign objects that might've gotten in from the field.
  • Put a bit of water into the pot (about to the level of the beans) and use your hand to wash the beans, removing any dirt, etc.
  • Empty dirty water into the sink. Try to keep the beans in the pot for this step. Then empty the beans into a strainer.
  • Turn on faucet & dig into beans to further clean.

2. Pour the beans back into the original pot.
3. Allow pot to sit on stove (burner off) for most of the day. This allows the beans to soften up a bit before the cooking process.
4. When ready to cook, empty the pot (beans and water) into the pressure cooker.
*Be sure to start with low heat. Sync the cooker with the stove.*
Allow cooker to gain pressure. About 35 minutes. Begin the timing from the point the cooker begins to squeak/make noise.

*While the cooker is gaining pressure, it is best to begin with the seasonings and flavoring.*

You will need:
- Green Bell Pepper. (prefered. If not availible, use red.)
- Tomato
- 2 Garlic teeth.
- Onion
- Cilantro

*The other halves may be used another time; store them.*

Cut in half:
-Bell Pepper
-Tomato
-Onion

Cut up:
-Cilantro
-Tomato Half
-(2) Garlic Teeth
-Onion
-Bell Pepper Half

*Make sure to cut up the above ingredients rather thin/as thin as possible*

5. When finished cutting up the above ingredients, put them in a frying pan. Mix them up and add (1) cap full of olive oil. Turn burner to HIGH & stir constantly. After about a minute, add a palm measurement of salt. (Stir/mix)

*Allow the above ingredients to sit with burner OFF*

6.Now, the rice should be put to cook.

  • Measure rice. (Usually 1 or 2 cups, depending on the amount of people being served.
  • The amount of water is the same amount as the rice + about a ΒΌ cup.


7.This should now be about time to turn off the pressure cooker's heat. If not, just sit/stand around and wait for it to finish. When it is time:
-Turn off burner.
-Let sit for about 5 minutes.

8.Use a spatula/wooden spoon, to relieve the cooker's pressure by lifting up the small cap little by little. Do NOT completely remove the cap. Lift it up a little bit with the spatula/wooden spoon for about 5-10 seconds and then drop it. Repeat till no smoke escapes. You may now remove the top to the pressure cooker.

9.Now, remember the other ingredients? Put them into the pressure cooker and stir them in. Cut a sour orange in half. Sqeeze the juice into the pressure cooker. The beans should still be in it.
