Todays meal was rather delicious. The usual rice was made, though having no meat in the house-le weep- I set off on an experiment for my side dish. With my rather plain rice I had a serving or two of virgin olive oil fried potatoe slices. It was more filling than I thought it would be. And tasted great too! the flavor of the olive oil rather helped in bring to life my plainly flavored rice. ^_^

Recipe:

Igredients
-1/2 rice (which ever grain you perfer)
-1 cup water
-pinch of salt or to taste desire
-1 table spoon butter
-Virgin olive oil, or cooking oil of choice
-One small potatoe (perferrably smaller than your fist if possible)

--Will need a small sauce pan with lid and fry pan.

Directions Part one-

Turn the heat to your stove top burner onto a moderate to high temp, and place your sauce pan of water, salt, and butter onto the burner. Let set until the butter has melted. Next add your 1/2 cup of rice and cover. Let set to cook. Note-do not let the rice burn and check occasionally. every so often, taste a few grains of rice to see how well it is cooked. When the rice is half cooked, move onto Part two.

Directions Part two-

Turn on a second burner to moderate heat. Place your fry pan onto the burner and fill with your cooking oil; enough to cover the bottom. While it warms, take your potatoe and cut off the ends. Then slice the potatoe into thin slices about 1/8 to 1/4 thin. If this seems to think, slice more thinely. If too think, slice more thinely. Note that thine slices will cook more quickly.
When sliced completely, take your potatoe slices and place into your fry pan of heated cooking oil, and let set to cook. Cook until their sides begin to brown just slightly, and then flip. Let cook until the other side is also browned only slightly.

When rice is finished, stir to prevent form burning, and remove form heat. When Potatoes are finished, set onto a paper towel covered plate, or on uncovered plate to leave oil for flavoring.

When serving, you may eat how ever you like. Or for a more fancy approch when serving guests this dish try the following examples:
-Dish rice into bowl. Then lay potatoe slices along one side or all around the edge of the bowl, overlapping them slightly.
-fan the potatoes around the edge of the bowl, then dish rice into bowl, slight covering the potatoe slices.
-dish rice into bowl, then stick potatoe slices into the side of the bowl, between bowl and rice.
(if you are too lazy to be fancy, than just throw it all in the dish. Eather way, it's bound to taste good!)

-Makes two servings.
