Blue Berry Muffins
Ingredients:
2 cups flour
1/2-cup sugar, (Optional 2 tsp. Sugar)
1 tbsp. Baking powder
1/2 tsp. Salt
1 egg
1 cup of milk
1 stick of butter, melted
3/4 tsp. Vanilla
1 cup frozen, well drained blueberries.
Directions:
1. Preheat oven to 400°.
2. Melt butter in a small saucepan over medium heat, stirring with a wooden spoon. (Takes about 1-2 minutes)
3. Combine flour, baking powder, sugar, and salt in a large mixing bowl.
4. Beat egg in a small mixing bowl, and then add vanilla, milk and melted butter.
5. Make a well in the dry ingredients.
6. In a large bowl stir quickly with a fork until dry ingredients are moist. DON’T OVER MIX!
7. Rinse blue berries in a wire strainer over the sink. Gently pat dry with paper towel.
8. Gently fold in blue berries using rubber spatula.
9. Spoon batter into muffin cups until 2/3 full. (Optional, sprinkle the extra 2 teaspoons of sugar evenly over the tops)
10. Bake 15-20 minutes or until golden brown and toothpick comes out with out crumbs attached.
